Berries Popping Icebox Cake

The last bank holiday of the year gives me a bitter-sweet feeling. It marks the end of summer in the UK (my favourite time of year). I have chosen to make the best use of the last summer days with this simple #mobakeseasycake recipe

This is a perfect for a post barbeque dessert treat and like I said before….it is VERY EASY!!!

Prep time: 15mins; Ready in: after 4 hours


  • Double cream
  • Graham Crackers
  • Sugar
  • Vanilla syrup
  • Berries (strawberry and raspberry)
  • Popping candy
  • White chocolate  to garnish

Let’s get started:-

Place the cream, sugar and vanilla syrup in a bowl, mix together until stiff peaks form .

Layer graham crackers in a glass dish; add 1/3 of the whipped cream and smooth

Add 1/3 of the berries in an even layer; sprinkle the popping candy.

 Repeat layers 2 more times, ending with berries and sprinkled popping candy. Garnish with white chocolate 

Refrigerate for at least 4 hours or overnight before serving.
