Hi Guys, I am back with the second instalment of #mobakeseasycake with a ‘Buckle’ recipe. The names sounds strange but trust me, this does not have anything to do with footwear or a belt.
According to the Merriam- Webster dictionary, a buckle is a coffee cake baked with fruit. In my opinion, it has a pound cake texture but with a main difference of additional ingredients (fruits, almond extract etc.), plus it is a perfect treat for lazy summer days.
I decided to use strawberries for my buckle as it is one of my favourite fruits and summer gives me the opportunity to explore a wide range of possibilities with strawberries. The recipe below is an adaptation from Food Networks ‘Strawberry Buckle’ recipe
- 454g fresh strawberries (hulled and quartered)
- 4tbsp. unsalted butter (melted)
- 480g. all-purpose flour
- 340g. sugar
- 1 large egg
- 1/2tsp. almond extract
- 1 tsp. baking powder
- 1 tsp. salt
- 120ml. milk
Let’s get started:-
Preheat the oven to 190 degrees
Add the butter and sugar to a large bowl and stir to combine. Add the egg and almond extract and continue to stir to incorporate.
Add the milk and stir to combine.
Add the flour, baking powder and salt and mix until fully combined (the batter will be thick)
Pour the batter into the prepared baking dish. Place the strawberries on top and gently push them down into the batter.
Bake until golden brown, about 35 minutes.
I served mine with whipped cream (which wasn’t bad) but you may want to try using vanilla ice cream or chantilly cream.
