July has been an exciting and extremely busy month. My husband and I celebrated our first year anniversary, my sister graduated from university and I made my first dragon themed cake with fondant icing! (Check out my Instagram or Facebook page to see pictures). Some people have asked me to blog more about cakes so I will be spending the next 2/3 weeks on different forms of cakes; Feel free to leave baking ideas/suggestions in the comment section at the bottom of this page.
We will be starting with a ‘Marbled Traybake Cake’ – I have decided to start with this because it does not require the use a baking tray
Prep time: 15mins│Cook time: 35mins │Ready in: 1hr│Serves: 16
- 175g. Butter
- 175g. Caster sugar
- 1tsp. Vanilla extract
- 3 Eggs (beaten)
- 200g. Self-raising flour (sifted)
- 1/2 tsp. Baking powder
- 1tbsp. Milk
- 1 1/2tbsp. Cocoa powder
- 75g. White Chocolate (broken)
Preheat the oven to 180°C
Cream butter, sugar and vanilla in another bowl and mix them together (until light and fluffy)
Gradually add the eggs to the mixture
Add the flour mix and fold in with milk
Spoon half of the mixture into the prepared tin, spacing the spoonfuls apart and leaving gaps (similar to the picture below)Blend the cocoa powder to a smooth paste with 2 tables spoons of warm water. Stir this into the remaining cake mixture.
Drop small spoonfuls between the vanilla cake mixture to fill in all the gaps.Use a knife to swirl the mixtures together a little.
Place in the oven and bake for 35 mins. Remove cake from the oven and allow it to cool for 5 -10 mins.
Transfer to a wire rack and let it cool further for about 30mins (you need it to be completely cooled before adding the chocolate).
For the white chocolate decoration:
- Place the white chocolate in a bowl and melt in the microwave for 2-3 minutes (until it is melted).
- Place it in a piping bag and decorate as you desire.
