This is a combination of two recipes: poached plum sauce and caramel sauce.

3tbsp. Double cream
Let’s get that started:
Cut the plums into quarters and remove the seeds. Tip (15g) of the sugar into a pan with 110ml water. Gently heat until the sugar has dissolved.
Bring the pan to the boil, then let it simmer for 5-10 mins, depending on the ripeness, until the plums are soft.
Tip the remaining sugar into another pan and place over a medium heat until the sugar has melted.
Turn up the heat and bubble for 4-5 mins until you have caramel.
Pour the caramel into the ‘poached plum sauce’ and carefully mix together. The end result is your plum caramel sauce.
